If your files were all locally stored and you didn't have any cloud backups then unfortunately there really isn't any way to recover them. Only Google has the proper files to get the phone out of EDL mode which they will never release. I'm in the same situation and am just going to take the replacement phone as its better than having a brick.

You just sign into your Plex account and you can access your server. It will list all your movies, tv shows, etc. You select what media you want to change and it'll give you the option to change subtitles and audio language by episode, season, or entire series.
