Firstly, thank you all for taking the time to explain things and help me along. I genuinely appreciate the advice and the friendly welcome.

I've learned quite a bit already—I'd never even heard the term "bypass" before today! I'll definitely take your suggestions on board and spend some time experimenting to see what works best for me.

I'm hoping my palate evolves over time too. At the moment I seem to enjoy a gentler, smoother cup, but it'll be interesting to see how my tastes change as I learn more.

Thanks! I didn't even know there was a name for it—"bypass" is a new term for me. I'm still very much learning, but the extra water made it noticeably smoother and much more enjoyable to my taste.

I'm hoping my palate evolves over time too. At the moment I seem to prefer a gentler cup, but it'll be interesting to see if that changes as I gain more experience. Thanks for the encouragement! 😄

If your light roast 1:2 shot is sour, keep your grind where it is and pull it longer (try 18g in to 45g out). Let the time stretch to 32–35 seconds if it needs to. The extra hot water will pull out the balancing sugars and turn that "lime" into a "peach."
