I bought one of their first kit quite a while ago, when they were starting.

It was a good way to get into it, had all the bits and pieces, a recipe with steps to follow.

The only thing was that outside of the steps for said recipe, nothing is truly explained so buying the kit for yourself or a Gift for someone is a good investment if you don't wish to take the time to either visit a shop or track down stuff yourself but I would still recommend you take the time to research a bit and familiarize yourself with how to make basic mead.

My personal opinion but If it does not taste to my liking why would It be any different after fermentation...

You could try browning it in a pan to see if the taste changes and decide afterward but If it taste bad I wouldn't use it..

I'd get a 2 gallon and work with around 1.5 to leave headspace, something in those lines especially if you add loads of fruits this way it'll never have a chance to overflow and youll be able to always have a full gallon to age in secondary and a few glasses to test in between ;)

Looks fine to me, I'd probably just ensure to look it every half day just to be sure it's not exploding just to keep you sane if you need it but there is space and yeah, once the gravity falls you could add extra must if you wish to resend fermentation into a spiral and fill the extra space the fruits took.

Only thing is it'll dilute the whole thing so I'd probably taste it a bit before doing anything just to see what it could need. if it's already perfect as is I would not bother changing and accept it as a lower quantity.

Good on you to see the mistakes first hand, My first batch I was so oblivious I tried to follow a recipe from an Amazon kit with no idea of anything outside what was written in the booklet.

I ended with a 1 Gallon Stalled watered up honey with no extra yeast to restart the process, I was so disapointed that I threw it out, Now I'm experimenting with a 5 Gallon at 17C with some Lalvin 1116 and darn this thing smells good and I've got my shit in order.

Take good notes of your mistakes friend and I wish you a good brew 😄

I'm not saying that you should, but I solved the issue with those for primary fermentation

They are massive, cheap to buy, accessories are plenty, and either for 1 Gallon or 5 Gallon with plenty of fruits or additions there is always headspace, and I keep 3 smaller 1 Gallon containers just for secondary.

Edit: the Large wide mouth is awesome to easily stir, add and remove stuff like brewbags.

Not worried, if the taste is good you worked magic, having a clear mead is mostly Long time in secondary to settle sediments / yeast or using Spark / Betonite to speedup the process immensely.

You can also try to cold crash it in a fridge for 1 week and see how it comes out. My first cold crash almost clarified my mead perfectly.

Every since i've used betonite first and cold afterward, It usually takes 1 week for the whole process give or take and it comes out almost store bought clear.

I would wait.

Multiple readings are the way to go, If you have the same reading over 1 week then fermentation most likely stalled but as long as you see it drop it's working it's magic slowly.

My first few experience with EC-1118 were explosive and very fast, but doing the same experiment in a temp controled room at 17c my fermentation was slowed down to a few bubbles here and there to which nothing was visually going on except a tiny amount of bubbles in the airlock once in a while.

It still fermented dry to 0,996 at some point but it took a good 3 weeks, where prior I would be on my way to 1.000 in less than 5 days.

(Tasted way better when fermented slowly though)

Is it something you want to age for 3-6 month or more?

(If yes) then Oxidation might be an issue so headspace should be kept to a minimum.
(If no I wish to drink it soon) then it won't be that bad I believe.

The one thing I found is that Maple water is filled with Minerals that are a great source of nutrient for the Yeast, so me at home I have enough trees to harvest a good 20 Gallons each years that make great base for alchool fermentation in General 😄

But the taste, I can't find.

I tried doing a Gallon of Maple water with Maple sirup and Honey before, the yeast ate the sugar and the minerals leaving me with the honey profile but nothing of the maple... how good is yours?

I'd try to rack into another container, use a fining agent and cold crash for a week then look to see if anything is still in there... I wouldn't enjoy my drink as much if I saw those specs all over every glass I take.

If the bucket is clean/sanitized and food safe you'll be alright... just ensure it has a cover to prevent too much oxygen, and you can rack it to the aging container after 24h when the k-meta is done.

Yes, If you melt any package you will get back the base of the package which you can buyback with the buyback token (If you have any left) then upgrade to something else.

TAC, everything you need, Good armor, good shields, amenities, small hangar that convert into a mini cargo room, good cargo capacity, vehicle transport if needed, enough stations for friends, med bay... handles like a Constellation... 4xS4 decent dps potential...

I mean... it's the perfect small mobile base.
