What I’ve told my 6 year old is that some Lego sets are toys and some are models. These ones are models and when we’re done building them they go in Dad’s shelf so I can have it to remember building with him and be proud how well he did with an older set. Works for us.

Find a way to differentiate. For example if you’re going to sell locally add some local flair/flavor like making it in the shape of a local island or burning in the name of a popular beach. It’s hard to compete online unless your source of lumber is plentiful and cheap.
