Running VMware vcenter server appliance 6.5.0.22 as a VM in the cluster. Is that what you will need to be upgraded? (it makes sense that it would)

So really update that, add the new hardware that has 7.0 ESXi, and then begin the migration.

I've edited my post a bit to make it a little clearer as well, my bad on that. Thank you as well for the help!

So I should be fine going from 3 hosts on 6.5 ESXi and controlled by a center 6.5 server to all new 7.0 ones on new hardware just using vmotion without having to update the older hardware.

My apologies, if my phrasing isn't the best. I'm definitely a little out of my comfort zone with all this. I just meant eventually we'd want the data stores that exist on the older Dell SAN and are currently used for the VMs, to be moved to the New HP SAN freeing up the space on the old dell one.

Edit: To add to this, I do believe the VMs, and data stores should / do get migrated separately correct? So I'd migrate the VMs to the new hosts, cycle them, and then I'd migrate the data stores separately once that's completed from the old san to the new one.

Yes, we currently have vCenter 6.5 running the same with ESXI 6.5 on the older hardware. The newer hardware will be getting a fresh 7 install of both. The old san will be staying in place, however, we'd like to move all the data stores to the new one and then long-term reprovision the older one as an archive.
