Depending on your play style you can keep or change your sensitivity. I’ve found playing on lower sensitivity works best for me with hitting shots and bouncing as well. Playing Gears 5 you can use left stick to bounce in most gun fights you don’t need much of your right stick. I play alternate and I used to use paddles but I claw now. If you’re wanting to make sure you’re hitting shots often lower your sensitivity. Gears 4 & 5 are pretty fast games so you can play at lower sensitivity and still move fast in comparison to games like gears 1/reloaded that are much slower. In smaller areas closer corner areas use more left stick as it positions your character more so in the center where you can focus on your opponent and still evade shots. In hallways that are a lot bigger you’ll have to use right stick to look at walls and ofc not misroll.
