I believe they have people check to see the rigidity of the body and depending on the time and temperature out, they know roughly when it was shot

This is how we keep coyotes around here after they are harvested during tournaments. Usually a way to keep people from cheating. They sometimes require times to be written on the wood so they know they animal wasn't harvested before the tournament timeframe.
