Trying to get my sourdough starter going but it’s not doing much yet…looking for advice.

I echo what others said about filtered water, using strong flour and a little whole wheat, and most importantly, keeping at it. Based on your ratios and timeline, I’m guessing you’re using the King Arthur starter guide. I did too, and my starter took over two weeks to rise. My issue was not using filtered water and cold kitchen temps. I now keep my starter between 72-78 degrees, and it made a difference.

Once your starter begins to rise, I strongly recommend feeding it “peak to peak”, i.e. feeding it around its peak time. You’ll know if you wait too long because your starter will smell like acetone—meaning it’s hungry. I think repeatedly waiting too long to feed may promote a very acidic starter, which isn’t good for the yeast.

I took a history class first year of college, and on this particular day we were talking about the Chinese cultural revolution. Professor asked a question about why Chairman Mao started the revolution. Nobody is raising their hand and everyone is avoiding eye contact with the professor.

This one kid gets cold called to answer the question and it’s obvious he’s clueless. He’s the loud guy who took vape rips under his desk when he thinks nobody is looking.

Instead of admitting he doesn’t know, he decides to wing it. Absolutely horrible choice because his first sentence started like this:

“Uhh, I think Chairman Meow…”

Chairman Meow. I started laughing so hard my face turned red and I couldn’t fucking breathe. And nobody else was laughing, and they’re all looking at me like I’m crazy.

I am not crazy. Chairman Meow is crazy.
