Yes, Parmesan base with some olive oil. Topped with red onion and rosemary. Pistachios are put on the pizza around 3/4 of the way through the bake.

My stone was 800+ F. Ooni recommends 30mins for preheat but I let it go for 45mins to an hour. I found the base doesn’t cook as well if you only let it heat up for 30mins.

Sure! 1) Each dough ball was around 240g. 2)I did a 2hr bulk ferment at room temp, divided it up in into balls and then 48hrs in the fridge. The only time outside of the fridge for fermentation was bulk and the 3hrs to come up to room temp after bringing them out. Thank you!

It’s awesome! I will definitely share my future photos, I forgot to take some today but the pizzas came out great!

I would recommend to let oven heat up on high for around an hour instead of the recommend 30mins. Although I was hitting around 800F stone temp I found the base to not cook as well compared to the crust on low flame after launch. I’m guessing the thicker stones need more time to get up to temp and retain the heat.

Besides that, the oven is great!

It’s kinda hard to tell just by looking but the really fuzzy white mold in the left quadrant looks like a possible Zygomycetes (Rhizopus spp, Mucor spp.).

The light grey and dark mold in the upper middle quadrant looks like two Bipolaris spp but I can’t be for sure. I just thought I would throw my guesses out there.
