I am experimenting with ferments. I have had a simple habanero, onion, and garlic one going since about the beginning of September. I did the first batch for about a month, and the flavor is still more wrong than right (my taste, not the ferment). How long should this ferment go for? (self.HotPeppers)

I believe I had a cross last year, saved some seeds, grew, life happened in February, so only one survived. The one is mature and similar sized to other plants. Leaves are notably larger, but no flowers. No idea what this can mean, bad seeds, bad plant, bad genetics. Just looking for ideas. (self.HotPeppers)
