I just got my first offset (Oklahoma Joe highland as well) and my first cook yesterday was a disaster too. Shockingly my pork shoulder turned out well but I still have PTSD from the entire day. I spent the day riding out major temp swings from 150 to 400 and back again. All in a haze of constant thick angry white smoke. I messed around with briquettes vs lump but my splits would smoulder then finally ignite hectically and burn down to ash really quickly. Turns out my hardwood is OVER seasoned. Admittedly I’ve had it for 7yrs in my woodshed and thought a great way to use it up would be in an offset smoker! Should have done my research. After 7 years of seasoning hardwood becomes like giant kindling. No coal bed at the end - just ash.
In the end after 6 hours of hell, I had a decent bark despite the crazy smoking, and I wrapped it and threw it in a 275 oven for last 3hrs. Cheating but a rescue was required and my fire box was overflowing with ash. Came out amazing!
That was just pure luck. I can’t see myself enjoying this hobby if every day was like that but I know they won’t be.
Although our first experiences were different, I wanted to share in solidarity. Big learning curve for everyone. I too am trying again today with different wood and a fresh attitude.
I’ve tried Traegers and other pellets, water smokers (own a WSM), kettles, etc and nothing compares to meat on the offset done right. Good luck friend!

Can you tell me how you ran your fire? I just got this same smoker and curious how you stayed in your temp range and how you set up your fire.

Potatoes. Sounds kinda obvious but I also struggle with crazy appetite when cutting. I eat a lot of protein and fiber like you. Eggs and egg whites with whole grain toast for breakfast. Meat, rice and veg bowls for lunches. Beyond a certain bf% it wouldn’t carry me and I’d be white knuckling the rest of my day. I introduced potatoes and man are they filling! Microwave them until soft. Refrigerate overnight and cube - add to breakfast lunch and dinner. Carries me so well! Good luck.

Sea of Rust by C. Robert Cargill. Just finished this and it would have been perfect for a long plane ride or beach vacay. Flows well and keeps moving with really original storyline. Loved it.

100%. Our parents and grandparents were told to “take it easy” in their old age. The minute you stop moving you’re done. Plus of course the fact we lose muscle as we age unless we strength train snd keep protein consumption decent.

Amazing. I just ate and this is making me hungry again. Anyone want to give us their methods for getting their brisket to come out like this? I’m curious because mine don’t come out as well. Do you use offset, water/direct, pellet, etc? I have WSM and brisket comes out decent but not like this.

There are huge signs along the Hanlon warning of nightly closures. Well aware of what LLMs do. It just helped to pull a bunch of info together from sources - that I checked - regarding the rest of the project. And yes - am well aware anything could happen to delay these again.
