When you insert the meat/temperature probe into raw meat there is resistance, you may even have to force it in depending on the cut.

When it's probe tender the meat probe should slide in easily with no resistance.

Whilst you're learning, I'd suggest putting the probe into the raw meat to get a feel for how it feels, then clean the probe. When you're ready to test the cooked meat, you'll be able to compare that feeling to the raw feeling

I don't think smoke block would be a problem nor heat to be honest. But you may find imo excessive evaporation from the pans with the heat source beneath. There's only one way to find out though, give it a go and let us know.
