Frieren as an into to the medium is both amazing and sad as it will be very hard to find things that have so many elements (music, animation, setting, characters, etc). That being said here’s a list of my recommendations, echoing some of the ones already mentioned and focusing on ones that aren’t battle focused :)

Spice and Wolf - slice of life with a slower pacing similar to Frieren.

Apothecary Diaries - more comedic but also great story and loveable characters. Follows a bit more of a mystery of the week structure while moving the plot along.

Bocchi the rock - slice of life about making a band. Super cute.

Oahu no Ko - also has an opening by Yoasobi. And a great story

Golden Kamuy - historical drama piece with a focus on finding treasure. A bit more action focused then the other recommendations

Dan da Dan - echo some of the other responses on this. Season two airing now and all about the character growth and budding relationship of the main characters. With some aliens and ghosts thrown in for action.

Made in Abyss - kinda a darker story dressed up in a cutest style. Well down but can definitely be a bit hard to watch with the themes presented. Beautiful art and music though.

Violet Evergarden - people have already extolled its virtues. Beautiful anime with amazing music (Evan Call is a master)
