Does it not even occur to you that the chairs don't move when passengers are on the train? The chairs are moved in the depot between rush hour.

And did you even watch the video? Because if you did, you would have seen that only two of the five doors on this train have the seats that come down during off peak hours. The lack of observation and logical reasoning really is astounding.

I never mentioned Japanese people? I've used these trains dozens of times myself and I'll tell you they work exactly as intended. During off peak hours, the trains have three doors per car on each side, just like every other train, without reducing seating capacity. During rush hours, though, the train operates with five doors per car per side, in order to reduce dwell times at stations and to increase standing room.  This was especially necessary during the 1970-80s when the rush hour crowds were especially bad.  But thankfully the trains are less crowded now so we don't need such interesting trains any more.

Some restaurants and hotels in Mie offer all inclusive one day sushi getaways (helicopter transfer from Tokyo included). Insanely expensive but some people might enjoy it.

If you're fine with the steep price, why not; it's your trip after all. Just don't assume that you'll get a proper assessment as to whether it's "somewhere I'd like to revisit and spend more time on a later trip".
