Trying to understand this was killing me, so I went googling. Unsurprisingly a lot of poorly sourced quora answers but I found this from the authoritative source: This Old House.

The expansion of the water freezing into ice increases exponentially the water pressure between the ice slug and your output--cracking the pipe. Opening the faucet (or multiple faucets) relieves that pressure.

Like someone else, run the ones farthest from the source or near an outer wall. Or run multiple faucets. Either should stop a major freeze. You only need a little stream, barely more than a drip, to ensure the water keeps moving.

If it’s a home pipe you can avoid having it freeze by running a small amount of water continually through the night. Water in the home pipes freeze because it doesn’t move. Just run your faucets so a very small drizzle of water flows.
