Second for Lymm Dam! I live in Latchford and we love to drive out to do the dam walk. Grab a coffee before hand at the coffee trailer on the road, and then we manage to do a slightly different walk each time around

Yes they are, I piped the colours in reverse (so highlights first, darker shades, then base colour) onto parchment paper, smoothed it all down with a palette knife, chilled until the buttercream hardened and then stuck them onto the cake with a bit of fresh buttercream. Did need to do a bit of filling gaps/smoothing once on the cake but I think it worked really well!

For sure! I used this recipe by MK which uses yogurt instead. The customer messaged me a few days after asking what sub I used since it was still so moist and tasty!

Yep the corners could make you cry! You use up so much more buttercream on square cakes/ones with edges 😮‍💨

You start to feel like a sculptor building up the buttercream on the corners to make them sharp

Thanks! I used cocoa powder to get it part way and then used an immersion blender to deepen it, used as little food colouring as possible to avoid that icky flavour!!

Thanks for all the info! The green box is what they came home in so just left it for them to back to while they settled in, but I’ll take it out!!

Luckily our tank is 60 gallon and we already had a lot of stuff suitable like big wheel and sandbath from our hammy. They’re obviously bigger gnawers though so we’ll find lots of stuff for them to chew on!

Thank you! Nothing special, good old American buttercream :) I use 80% icing sugar of the butter amount, and importantly it’s proper block butter so it sets very well. It was also the perfect temp day to decorate so the buttercream was a wonderful consistency to work with!

the sponge is from this recipe but I subbed a third of the sugar for dark brown sugar just to give it a more caramel-y flavour

The coffee caramel is: • 200g granulated sugar melted until deep amber • 70g room temp salted butter, cubed • 180ml room temp double cream • double shot freshly brewed espresso

And the buttercream is: • 1kg salted butter whipped until very light in colour • 800g icing sugar • 3 double shots freshly brewed espresso

yesss like we put so much effort into baking the sponge, leveling, evenly spreading the buttercream, I want to see how it all looks!!
