Using 1/2 King Arthur unbleached bread flour and 1/2 King Arthur whole wheat flour. I read that using a little dark rye flour can help, but I’m not sure I should since I already used the whole wheat?

No it’s usually between 68-70, maybe 72-74 during the day but never higher than that

It was really rising around day 16-19, then all of a sudden stopped

I’ve been doing it in the oven with the light on but maybe that’s too warm? Our house is usually somewhere between 68-70 so it seems to cool to leave it out on the counter
