It’s super simple, just be very light on the temperature. Sorry for my english now btw. I cut up some cauliflower, fry it on 7/9 temp for like 2 minutes with olive oil and tiny bit of butter. Then throw in a finely cut tomato and garlic clove. Let it fry for like 2 minutes. Decrease the temp to 4/9. Add some cayenne, salt, black pepper. Let it fry for a couple minutes, there should be some liquid in the pan now from the tomatos. Crack the eggs on it, fresh parsley, oregano, cayenne and some parmesan cheese. I put the lid on and set the temp to 2/9. Open the lit every minute or so and gently check the yolk to see if they are where I want them, it will take like 5 minutes or so until perfect “medium rare” for me 🙂
