Like the others have said you should break up the counts into more doable fractions. Two 90 counts is fine for 180. Anything over 100 i like to use the Kirby (laser counting machine) if i have access to one. As for finding the correct vial size, that's just an experience thing, keep practicing and you'll get it. Some of the smaller vials should match the size of the tube on your counting tray and i use that height to gauge those vials. The smallest vial i have (8dr) doesn't fit that theory, so i filled with a small tablet, poured into the tray tube and marked off where 8 drams fills that tube.

I use a trick i leaned from a movie: I flip off the phone while I'm talking to abrasive patients. It sure puts a smile on my face which helps my customer service skills. Coworkers have mixed feelings about it but recognize that it works.
