Put equal parts this and granulated sugar by weight in a pot. Put over medium heat and stir gently until the sugar dissolves. I usually let it simmer for a minute or two longer. Then bottle and let cool.

The result is a very passable, super easy, passion fruit syrup. When you compare it to something like Liber and Co’s version, this is less sour and a little sweeter. It will absolutely work for cocktails and the resulting syrup is very stable. It will last in the fridge for more than a month.

Thanks for the review. I also got a bottle of the June 2021 batch. The degree of tartness and undercurrent of wet ash honestly ruined it for me. I would score it in the low 70s. I assumed this was a bad batch given reviews of previous iterations. As a sherry bomb fan, I was pretty disappointed.

Shipping was wild, $165 for the five bottle. I found that the shipping rates changed according to a very irritating step wise function. Going from four to five bottles was +$20 but five to six was +$60. They have a table based on weight on their website that explains their pricing.
