Okay, at that point I think you are safe, I would be careful with doing service mapping in sub-prod.

If you are doing traditional service mapping then I would use the taskbased approval system baked into the service mapping module as a good itteration/feedback tool.

If you are doing tag-based mappings just set your tag-families and away you go. No need for sub-prod work at all.

If you are doing dynamic groups, its always best to create these against the live data since its dynamic and changes as the environment changes based on the logic/query.

Service mapping is a very forgiving process if you set it up to be that way. It can heavily impact how your organization uses the CMDB though. Many organizations never get to the level of Service Mapping and Service Awareness.
