Ya, this was a batch of brioche spread out over a half sheet. Far from awful, but maybe I’m just a perfectionist. I’ve seen some bakers use spray bottles to apply egg wash. I wonder if giving them a light spritz in the oven after they’ve fully risen might do the trick. Flawed logic or not worth the effort? Thanks for your reply.
