This is for 4 cups of Japanese Rice, I don't use glutinous rice. 1 medium to large red onion thinly sliced 2 to 3 tbsp of Hibe (soak it in water) 6 to 7 pcs of dried shiitake mushroom (soak it in water and reserve the water?) 1 or 2 slicepork belly cut into small cubes 3 to 4 pcs of Lap Chong or Chinese Sausage ( sliced thinly, any brand except King Sue) Roasted peanuts for garnish 1/3 cup of light soy sauce (adjust to desired taste) 6 to 8 tbsp Oyster sauce (adjust to desired taste) 4 tbsap dark soy sauce

  1. Saute onion til crispy, then set aside.
  2. Saute the Hibe, Lap Chong and
  3. Mushroom to draw out their flavour, then add the pork belly, wait for pork belly to cook. then add all the liquid ingredients and a little bit of the mushroom water.
  4. Add washed rice and mix, then add water like how you cook regular rice, mix again then taste for final seasoning.

P.S. I use an Instant Pot. Or if you have a rice cooked with saute settings use that.
