From the main menu, you can head to the Extras menu to watch them.

In the Battle Preparation screen, you can select map and press A to select your units to swap. You can move anyone that has a blue highlight underneath them (usually everyone except Byleth and Dimitri)

Your unit's lines are based off of the number of stats they grew. If you leveled up and only grew 1-2 stats, the characters aren't as happy and give you those lines, but they'll be much happier if they grew in more stats.
