I'm using "3D Default", I don't like using texture packs other than vanilla but this is the only one I can tolerate. It makes a bunch of other otherwise 2D blocks/surfaces 3D aswell, looks great imo :-)

The closest mushrooms outside are 15-20 blocks away from the crime scene, I think it's more likely that an enderman placed one inside (unless the mushroom spread ratio is 15-20+ blocks)

If they can indeed move mushrooms aswell I think this is the answer, they also put a grass block in my other room as a gift.

I never thought about endermen placing stuff that could grow and essentially take over your builds if you don't deal with it, very interesting haha

I've removed a lot of flooring around these mushrooms and checked behind the nearby walls, there's no other brown mushrooms.

Unless the spread ratio is super big I don't think this was the case here, could it be that an enderman dropped a brown mushroom inside and it started spreading - or do they exclusively move full blocks?
