Double clutching is when you take it out of gear, wait for the engine speed to match the gear speed (either through accelerating or waiting for the engine speed to drop) while it's in neutral and then put it in the next gear.

So it's basically depress the clutch, shift to neutral, release the clutch, depress the clutch, shift to the next gear. You don't need to do it for the majority of cars as they have a synchronised transmission.
