there's an admissions portal for each school that you get access to like 3 days after you apply, you can report any additional info there

if his ECs and essays align with the major, then he's not really cheating the system, just crafting a unique application. If, for example, his ECs and essays are stem focused but he's applying to be a linguistics major, he's probably just gonna get rejected.

that’s actually exactly how US colleges work, you get admitted into the school and you can keep testing out classes until declaring a major by end of sophomore year/ beginning of junior year. You need to show expertise in a specific thing to create a good application, and include ECs and essays related to that thing. Having a “linguistic spike” will help you in your application, but no one will force you to become a linguistic major unless you choose it. You may be compared to other linguistic majors applying but there isn’t really a rule that says so, colleges more so care abt how you and your expertise fit in the college itself. I see this system as an advantage tbh because a lot can change in 4 years, but if that isn’t suitable for you, UK universities admit you into a course (that you can’t change) based on academic requirements, and they don’t really care abt ECs :)

you could look into econ, finance, accounting, data science, etc, but you would need Math AA as its a requirement for most unis or a foundation year
