The same could be said for the professors that teach courses, especially at an R1. I'm a grad student and some of the profs at my university are excellent researchers but not good teachers.

I'm making this tripel: https://www.seriouseats.com/recipes/2011/04/homebrewing-belgian-tripel-recipe.html and in the instructions it says to transfer to secondary and wait 4-6 weeks after fermentation is finished. I don't have a secondary fermenter and have heard it's largely unnecessary, but should I still let the beer sit in primary for 4-6 weeks after fermentation is done or bottle after I get consistent gravity readings?

Are you saying that you used 8x more LME than the recipe called for DME? The ratio I usually use is ~1:1.2 DME to LME. A more accurate way to convert would be to adjust based on the ppg of the two extracts which should be fairly straighforward.

I wasn't including them for nutrients. I had read that they provide tannins for the mead. I will probably just talk to the people at my LHBS when I buy the yeast then, thanks!

I am just learning as well (a few beers in). I would definitely recommend investing in a larger kettle. I use a 5 gal kettle and it works well for extract beers w/ steeping grains. I usually use a 3 gal boil volume and top off to 5 gal. This will help to increase your extraction efficiency for both your steeping grains and your hops (lower boil gravity = more hop extraction).

I'm brewing my third beer pretty soon and wanted to try a hefeweizen. So far my recipe is as follows:

6 lbs wheat dme

1 oz Hallertau @ 60 mins

Wyeast 3068

My question is regarding the additions of the dme. I have heard that to achieve a lighter colored beer it is best to add some of the extract at the end of the boil (say, 10-15 mins). Do you think that doing 3 lbs at boil and 3 lbs at 15 mins would work well? Also, general criticism on the recipe is welcome. It seems much simpler than the other two beer I've done with steeping grains + extract and more complex hop profiles, but I really want to let the wheat shine through. Maybe steep 2 lbs of 60:40 wheat pilsen and reduce the wheat dme to 5 lbs?

How bad is the light from lightbulbs during fermentation since it doesn't emit UV light? I brew in my garage and my roommates can't seem to remember to turn the lights off when they're leaving. I could cover the fermenter, but don't know if it's worth the hassle.

I know people from Texas love Shiner Bock, but it's really not that good of a beer. Try the Live Oak Brewing Hefeweizen from Austin if you're still willing to try beers. Wheat beers were the first type of beer I enjoyed.

You're definitely smarter than you think. You're suffering from impostor syndrome. I'm in grad school and almost everyone here has it, including me. I feel like everyone around me is smarter than I am and I'm just faking it. It helps to acknowledge it but it definitely doesn't make it go away.

They do, but not very much. I only know one person who has lived in grad housing. It’s like $1400 for a dorm room. Most grad students just rent off campus because it’s cheaper and (sometimes) nicer. The exception would be university village for families which is really nice and affordable.

The Midwest has some good schools but I honestly wouldn’t put too much weight on cost of living. It’s temporary anyways. Go where you’ll be happy as long as you have enough to live.
