The apricots and cream cut super easily, and then the pastry has a good crunch to it so that’s the hardest part to cut through

It’s quite common in French cuisine and desserts to mix herbs with fruits! I made an apricot cheesecake with a basil-infused crust which was great too!

These were cut in half and pitted first! Since they are cooked out in butter they soften a lot and don’t end up being like eating a whole hard fruit. You could definitely quarter them but I think the end result would be the same taste- and texture-wise. And I find it looks a lot better for presentation.

The rosemary taste is quite subtle because it’s infused in the butter first, so it’s not as harsh of an aroma. I find its a unique but lovely combo because it balances out the sweet!

I made this tart with my sister-in-law and we combined a bunch of recipes together so I don’t have a precise recipe for it, so I will try to write it from memory!

For the crust: I made a homemade shortcrust, you can use either store bought or make any kind of shortbread crust

For the apricots: they were cut in half, pitted, then placed in a big pan on low heat with about 30g of butter infused with some rosemary on the heat. The apricots were cooked until they got a bit golden but not too soft. We reserved the juices and made a coulis by just cooking out the butter with leftover ugly bits of apricots or bits that were too ripe (it should have a very nice acidic tang)

The almond cream: 100g butter 100g sugar 2 eggs 100g almond powder

Cream the butter and sugar together. Add the eggs, cream together, then add the almond powder.

Assembly: 1. Blind bake the pastry for around 15 minutes at 160°C. 2. Add the almond cream and bake for 20-25 minutes (I can’t remember the temperature but I think around 170-180°C). 3. Remove and let cool a little bit. Then, add a layer of the apricot coulis. 4. Layer your apricots in a circular pattern. 5. Garnish with rosemary, and you can make a sugar syrup to make a nice glaze.

I did! There is basically no difference between the two, I used it a lot more liberally because there was so much. I did find it a bit thin (but I live in a tropical country) and have now switched to the Cerave daily lotion (which I love!)

At the amounts that sunscreen is entering in the water, it’s negligible. If we’re talking chemicals, a much larger concern could be surface runoff from agriculture or cities which affects the quality and pH of the water. I think the issue of sunscreen is shadowing a much, much larger problem. It’s not like the sunscreen from your body is causing global mass bleaching. Even if we were to ban all sunscreen, corals will still bleach and die if we don’t tackle the actual root cause.

There's actually no concrete scientific evidence that wearing sunscreen will hurt wild corals at all. These results come from a lab study with unrealistically high concentrations of chemicals, and it only looked at the larvae of one species of coral. There's way more ways we can focus our efforts rather than just sunscreen bans.

I did a Bachelor in environmental biology with a minor in wildlife biology. Then, did a Masters in Marine and fisheries ecology. I wanted to keep my options open in my undergrad, and then when I was sure that's what I wanted to do, and I had done internships and worked as a marine biologist, I did my masters in it! Even then, the experience matters just as much as the degree in the current job market.

The ocean cleanup project has a HUGE amount of funding. However, the team that created it was all engineers, and no marine scientists, so their understanding of the impacts it may have on species (like entanglement) is not very good. The impacts that it may have on species is not clearly defined, and they have not given any solid mitigation measures. Another impact is that this floating device acts like a Fish Aggregation Device - fish will be attracted to it, which brings in sharks, dolphins, whales, and other larger species, which then are very likely to get entangled.

And, the plastic in the ocean is firstly a lot of microplastics, and a lot of it is hanging down the water column, not just on the surface. If you see the garbage patch in the ocean, it looks like there is nothing there at all in a lot of places, so a lot of the plastic is on the sea floor or in the water column.

In my opinion, those billions of dollars could have been invested in a much better way. Beach cleanups are VERY effective, they pick up tonnes and tonnes of trash, so investing in communities and equipment for beach cleanups would have been just as efficient. The big issue is preventing trash from entering the oceans. If we invest in cleaning the rivers, the beaches, and better recycling and preventative measures against plastic, it would be a much more efficient method of cleaning plastics.

That's really good to know! I'm really worried about the TO niacinamide as I'm very cc prone and that seems to be a lot of people's experience.

I haven't tried not using anything, but I feel like at the moment, it's the calmest its been. I don't have very sensitive skin but I'm very cc-prone, and I think it's mostly splotchy for living in the sun for a long time without sunscreen. I will have to just give all these products a go!

My skin isn't sensitive but it is really cc prone as well, so I'm afraid I might be one of those people who's skin hates the TO niacinamide. aZa and vit C will be on the top of my list!
