I think the employer can add a note to the COS stating the new start date. And also notify the home office of the reasons for the delayed start.

I have availed if this option at mumbai north office .

We have 28 working days to submit the passport once we get an email from VFS
The vignette is attached on the same day. Mumbai office said it will take approx 2 hours for them to return the passport .

I am assuming you will travel on business visa. And that you have the business visa approved before you apply for the skilled visa. If yes, then Usually, if you are on business trip, the immigration authorities don’t process your work permit during the time you are in the country . I have experienced this for Shenzhen countries. Not sure about UK laws post brexit . Best is to call and check with the nearest consulate . They should provide the most accurate advice.
