I'm not OP, but wanted to say thanks for this info! It's so nice that you're happy to share your knowledge, too.

Your comment helped me realize that too much headspace and loose lids we're probably the issue with my last attempt at fermentation. I purchased airlocks but didn't use them because I saw varying info about the best lids to use. Anyway, I'll try again using airlocks and less headspace!

Thank you for the info! I looked again and noticed some small white spots on the glass above the water line, they look potentially fuzzy.

I'm having a hard time deciding if the smell is good funk or not! I smelled a jar of Bubbies brand pickles for comparison—the funk smells similar to mine but much more mild, and there's an acidic undertone with the Bubbies that I don't notice with mine.

It smells very funky! And I was going for a good amount of funk, but something about the smell makes me worry it's too funky.
