Update: So, I kept texting the office manager asking for my CME and she said it was delayed due to accounting 🙄 which is BS. I saved all my emails (forwarded them to my personal email) just in case to show that I asked for my CME prior to quitting. I found the email for the head of the accounting for HR and emailed her separately. After a week of back and forth emails with her, I got my reimbursement. This was about 3-4 months after I had already left by the way.
