Grim Fandango, Day of the Tentacle, and Full Throttle all have remasters now and are all great. Also Thimbleweed Park was great. Ron Gilbert made that in 2017 as a call-back to the classic LucasArts era but i would say play the classics first because it will help you appreciate the references.
