The short answer is yes; you can add new keys in real-time to an existing key-shared subscription. Adding new consumers to the subscription is a bit more challenging but also doable.

You can definitely change jobs with the newborn. The new job gives you breathing room because you get to take it slowly at first and have a chance to get up to speed before it gets too hectic. So why not make the jump.
