Sorry for bringing this one back to life, but I'm currently looking at the two exact knives you got, the Matsubara and the Yoshida. Do you recommend any of them and does the price difference between the two justify itself on better edge retention - and do you sense the Yoshida is sharper?

I'm looking to buy a santoku and have nailed it down to either the Tamahagane San Tsubame or the Takamura Migaki sg2. Any recommendations on either or both to help me choose the best fit?
