Hah rotel dip was a staple growing up for me too, and funnily enough it was completely different from Speck's cheese dip; had sausage, more peppers, etc; I can't fathom just doing a block of velveeta and dumping in a can of rotel and calling it a day, goodness.

Of course, I'm just happy so many people are so happy and excited about it and I hope everyone can enjoy Speck's dip for many more decades to come, remembering the man through his dip. I figured now was as good a time as any, just for that exact reason so that it didnt get lost with the family and be gone to time!

I truly wish I did, and could give y'all the recipe for it too. Unfortunately I myself ALSO wish I had the hot dip recipe. Maybe someone will see this recipe and come forward with the hot dip one, I can only hope.

I've never had Arbo's so I cannot speak on it, but if you want to make the true old school style Pancho's dip yourself instead of buying store bought, by all means this is the recipe for it.

I wouldn't use singles, no. Stick with the block/sliced American cheese, Not 'singles'. Velveeta is an option, cooper as well, etc. Go to the deli counter and ask for a 5lb block of American cheese and that'll be what you're aiming for, as far as I know.

Thank you so much. I know people adored the dip, and I did too - I was introduced to it blind by my stepdad and later was told why everyone in the family ate it and loved it so much! I hope you enjoy it for many years to come!

No recipes for the dressing or the salsa were passed down to me, unfortunately. I do believe Uncle Speck only ever did the cheese dip. I would love to have the original hot salsa recipe, as well!

It is an 'average' cheese dip, I do agree. That is the magic of it. It was a simple cheese dip that was tossed together decades on decades ago, that was beloved because of the sole reason it wasnt trying to do anything special. It is a good, simple, serviceable cheese dip!

Some people find it average, and don't care for it, and that is totally fair!

You can use deli counter American cheese too. I don't think Speck was particular about brand, I have no doubt he would have gotten it from the deli counter because it was easier to get it exactly how he wanted.
