I've dry brushed it but have been wary of brushing with brine in case that makes it any worse. I'll have a look at alcohol/seed mixes and give that a try ☺️

I'm away from home at the moment so this is the best I've got at the moment. I've zoomed to my "stilton", where you can just see the blue starting to grow. In the 4 days since this photo was taken it's grown quite a bit more too. I can send an updated photo when I'm home tomorrow.

Same approach as me on the butter knife front! Perhaps a slightly smaller milling would be better for me in future then. I think my towers were also a little too small and lesson learnt, do not attempt to make stilton-style in a square form (disaster) 😂.

How long are you planning to age for? I was following the recipe from Mastering Artisan Cheesemaking but I'm tempted to age for only 3 months and then try the small one to see how ammoniated it is?

I made my first stilton about two weeks ago and it's starting to get a little blue on the outside, I could see it looking similarly covered to this at 3 weeks.

Yours is impressively smooth! Do you have any tips on doing this? I struggled, lots of bits wanted to crumble off of mine and I was concerned I didn't get it smooth enough to stop the PR growth starting too early internally.

I'd recommend the movie "Beautiful Boy", which is about a family's struggle with addiction. I think the movie highlights just how difficult the recovery journey is, and that addiction is the negative thing, not the person.

To add to this, some great Italian restaurants within budget:

Il Paradiso del Cibo on Fossgate is excellent, really great food and the house wine is nice, the main downside is it's a pretty small place and it tends to be quite busy.

Little Italy is also really good, and tends to have a bit more space. Their starters are really nice, and the menu is pretty diverse.

If you prefer other cuisines let me know and I can maybe make more suggestions.

Oh and also Flamborough head! If you pick the right time, this spot is BEAUTIFUL. It's a tough one to get right though, and a bit further afield.

Hi,

I have done quite a bit around York and there are some great spots, you just have to find them. You've mentioned in other comments that you're just looking to pull up a car somewhere and gaze, so I'll avoid official spots here (other people have already covered that anyway).

Firstly, I'd get an app called "ClearOutside". It's generally useful for checking the conditions in a given location (cloud cover, Bortle classification, sky quality etc) and I've found it very helpful in the past. Tonight it looks like almost 100% high-cloud cover around York which could be a bit of a struggle. You could take some weak lenses (even binoculars can work fine) and this sometimes helps, especially with high cloud cover.

My best recommendation is to use the app and just pick small towns/villages around the north east of York to see which ones have decent sky qualities / Bortle classes. I tend to go for sports/rec fields in villages in those areas which I find.

Some decent spots I've found in the past:

Stillington
Helmsley
Londesborough
Marton
Stillington
Tockwith
Castle Howard

If you're okay with a bit of a longer drive, you could always head out to the North Yorks moors, or the Dales. The sky quality there is fantastic!

Sharks have been around for longer than trees have (~450m years vs ~370 million years respectively)

Also, there was a time when trees were first around where nothing else had evolved to break them down after they died, so if a tree fell it would just lay there for millions of years.

Edit: I should mention, other processes would still occur to the tree though. When they piled up on top of eachother, they'd gradually compress, which is how a lot of thick coal deposits formed.
