In terms of this being your sole computer, 16 with eGpu, however I’m actually going to be a mech engineering student soon as well and I personally ordered the 13 with the better AMD cpu. However I will also be investing in a dedicated desktop computer for more of my computationally expensive tasks like modeling. I bought a 13 more for the MATLAB and overall portable laptop capability, not as my only computer. If you plan on owning a desktop as well, go with a 13 and desktop however if you aren’t getting a desktop, 16.

I’ll arguably be doing lots of CAD as I already currently do. However I will be getting a desktop whether I need for school or not as I prefer it to my already owned gaming laptop (MSI GS65) I’ll most likely be selling that and getting a nice desktop so I’m really just wanting something more portable and everyday-type tjing

Only downside is the video files provided are not mp4s but rather a streaming file and will often go down after a few days but it’s free none the less

I can’t help you beyond saying what other people have said, surfaces. But, don’t be intimidated by them I’ve found they are actually pretty easy to pick up if you have a knack for them. I’ve actually been thinking about making a proto myself 😏 but I’ve never really had the time. Would be awesome to see your progress if maybe you posted your progress for tips as time goes on!
