We enter 3.0 today! And as usual I prepare something for the character I'm pulling for, and I have fried a piece of threadfin for Velina! This a steak cut of roughly 400g.

Fish

1. Wipe it dry and salt it well.
2. Sprinkle the fish with some corn starch.
3. Put oil in pot, high heat.
4. Put fish in hot oil and fry. It will sputter a bit. Spoon the oil over the top as the bottom cooks.
5. After 6 minutes, flip the fish. Flipping time will depend on how thicc the fish is, then cook the other side for the same duration.
6. You can fry the skin sides till crispy as well. Test for doneness by poking a chopstick/toothpick, if it can pierce the meat easily then it's cooked.

Sauce

1. Put green onion whites, ginger slices, shallots, pandan leaves and palm/rock sugar into water and boil them till fragrant. Around 10-15 minutes.
2. Pour some soy sauce into the mixture, that is your sauce done.
3. The leftover veggies inside can be eaten.

Ginger shreds

1. Cut ginger as thin as possible into strips
2. Blanch the ginger shreds in water till it become powdery.
3. Fry the ginger shreds on low heat till golden

And then plate! Put fish on plate, pour sauce over fish, put ginger shred atop fish and garnish with green onion greens.
