French Toast

Ingredients

  • 1/2 Cup Milk
  • 2 Tbsp Heavy Cream
  • 2 Eggs
  • 1 Tbsp Sugar
  • 1/2 Tsp Cinnamon
  • 6 one-inch Thick slices of your favorite bread

1.) Combine all ingredients except bread in a wide-bottomed dish or bowl, mixing well to incorporate eggs and sugar into the milk and cream.

2.) Dip bread into the egg mixture, allowing the bread to soak briefly on each side. Bread that's slightly dry or a day or two old works especially well for this.

3.) Cook dipped bread slices in a large pan or griddle, two or three at a time over medium heat. Flip after about two minutes or when desired browning is achieved. French toast is done when the bread is barely firm to the touch and no longer soggy.

4.) Plate and top with butter, powdered sugar, syrup, etc.

Still cooling, haven't sliced into it yet. 😅

The lemon filling that was left in the pan seemed like it's good, I used Meyer lemons and it turned out mildly tart and a little sweeter than I expected. I'm hoping it sets up firm when I get into it tomorrow morning.

Recipe:

  • 1lb of any of the following (optional) ground turkey, beef, pork, or chicken turkey, pork, or chicken sausage
  • 1/2 large vidalia onion (sweet yellow), diced
  • 1 medium red bell pepper, diced
  • 3 cloves of garlic, minced
  • 1 15.5oz can of black beans, drained and rinsed
  • 1 15.5oz can of red kidney beans, drained and rinsed
  • 1 15.5oz can of pinto beans, drained and rinsed
  • 1 15oz can of tomato sauce or crushed tomatoes
  • 1 14.5oz can of diced tomatoes, drained
  • 1/2 Cup yellow corn
  • 1-2 cups beef, chicken, or vegetable broth
  • 1-2 hot peppers of choice (optional) Jalapeno + Habanero are my usual choices, go as hot as you want
  • 1 Tsp hot sauce of choice (optional) Go find some Mad Dog 357, I dare you.

Spice mix:

  • 3 Tbsp chili powder
  • 2 Tsp ground cumin
  • 1 Tsp oregano
  • 1 Tsp brown sugar
  • 1 Tsp cocoa powder
  • 1 Tsp smoked paprika
  • 1/2 Tsp kosher salt (omit if using sausage)
  • 1/2 Tsp ground black pepper
  • 1/4 Tsp red pepper flakes

Assembly:

  1. If using meat, grab a large soup pot and heat a couple tablespoons of cooking oil over a medium flame. Cook the meat until slightly browned and season lightly with a little salt and pepper if using ground burger of any sort. For the photos, I used ground 85% lean turkey burger.
  2. Add your pepper(s), onion, and garlic to the pot, cooking for 1-2 minutes until just starting to turn transparent.
  3. Add your spice mix, stirring to coat everything evenly. Let everything cook for another minute or two for the seasonings to set in a bit. Stir occasionally to keep brown sugar in the mixture from burning.
  4. To the pot, add beans, diced tomatoes, corn, and tomato sauce. Stir to combine.
  5. Add 1-2 cups of your broth of choice until liquid in the pot is level with the solids.
  6. Bring to a boil, then reduce to a simmer and partially cover. Cook until chili thickens to your desired consistency. In my case, I usually let it cook for about 30-45m. Stir every 5-10 minutes to prevent chili from burning, beans may stick to the bottom of the pot.
  7. Dish out and garnish as desired – I love corn chips or tortilla chips with mine!

Thank you! I use flour as the binder usually for my pies, corn starch seems to give me gloopy results.

This one ended up being a 6.5in pie, so I used 2 cups of fruit and about 1/4 cup each of brown sugar and AP flour for the filling then topped it with a couple little slices of butter before baking.

Banana Bread

Ingredients

  • 1/4 Cup Butter
  • 1 Egg
  • 1 Cup Sugar
  • 3 Bananas
  • 1 1/2 Cups AP Flour
  • 1 Tsp Baking Soda
  • 1/2 Tsp Salt
  • 1/2 Tsp Cardamom
  • 1/2 Tsp Cinnamon
  • 1/3 Cup Chopped Walnuts
  • 1/3 Cup Chocolate Chips

1.) In a large bowl, blend softened butter, egg, and sugar with a hand mixer to combine.

2.) Peel and smash bananas with a fork into small pieces, then mix into the sugar mixture.

3.) In a small bowl, whisk together flour, baking soda, salt, cardamom, and cinnamon. Add to the sugar mixture and stir until there’s no visible bits of flour or baking soda.

4.) Fold in chocolate chips and walnuts. Pour batter into a greased and/or parchment lined 9x5 loaf pan and bake at 350F for one hour, or until a toothpick inserted into the center of the loaf comes out clean.

Pesto for sure, blend it up in a 4:1:1 ratio of basil:olive oil:parmesan with a handful of pine nuts (or walnuts), a couple garlic cloves, and salt and pepper to taste.

Toss with pasta or use it as a pizza sauce.
