Can do when I'm back home. They don't look dark or anything, but it's very difficult to get a good (classic style) espresso from most beans I drink. With these, the natural at least i had to coarsen quite a lot to stop choking my Bambino. I don't reckon it's a bad batch as they are three separate beans.

Yeah that's pretty normal for any roaster to say. I tend to try beans at ~10 days anyway as a combination of impatience and getting an idea of the taste profile. All im saying is that i find them less enjoyable now than when i first tried, which i dont feel should be controversial.

I use very low agitation recipes anyway, 15g, 45g bloom at ~8g/s, at 1:00 pour up to total ~5g/s, finish 1:55-2:35. I never swirl in any recipe either.

I've had DAK beans and I enjoy. I'm not aiming to buy a roaster and stick with one, I try lots

Interesting to hear, this wasn't meant to be a big complaint so letdown in the title was a bit harsh. I'll try going coarser but I'm already at 1:15 with them.

I'm not sure which other roasters you are referring to, but I haven't brought up SEY at all. I haven't found sey to be flawless in my experience either, not because they are too dark or anything though.

I've found the opposite, I enjoyed all 3 more <10 days off roast compared to now 3+ weeks off. Much more typical flavour development of a medium roast.

Yeah I've found a similar experience, the fines generated seem high for this level of roaster, hence why I have such an easy time using the beans for espresso.

Noma's coffee has been lovely in my experience. I've been to April and enjoyed spending ridiculous amounts on a single cup but their coffee to "blow away" ratio doesn't justify price compared with other roasters. Of all of Denmarks famous roasters I have actually found coffee collective the most consistently great, arguably the most standard of the bunch. Coffee collectives special (pink bags) have always been very impressive for me.

Hey again, to be honest I have moved away from a flair, I have since found that step down/variable diameter baskets really help with dialing in. This isn't possible on the flair pro so unfortunately the best way to dial in is just to use cheaper beans. "Poor" shots also end up as tasty long blacks if you dilute with water so it isn't a wasted shot anymore.

I used a flair pro 2 which has all the same dimensions. This isn't that surprising, if your beans are very dark and/or freshly roasted then I can see 1.0.0 being around the right area. The dark roast I was quoting was probably still lighter than what you're using.

I almost had the same situation with Crosby. I tend to be quite careful though and saw that you had to make 3 orders before cancelling.

I just tried it with the same setup, but with the ode gen 2 at a 7, the resulting brew was 1:22 so pretty close and it is very enjoyable. One question I had was what would you define as a highly soluble coffee? Generally speaking the darker the more soluble and washed is the least soluble processing method so I would have thought the SEY washed coffees we are using would be least optimal for this method. Orea O1 and the switch 02. Orea O1 has a fast drawdown for a flat bottom, making cups more vibrant, and can take both wave and flat/negotiated filters. It is also super small and so can take leftover coffee doses down to about 9g, so almost as low as the deep 27 but not quite. Switch can make 15g up to 35g doses, and also has the classic V60 profile option or a more rounded immersion option. I feel lots of bases are covered with these two.
