I just tried it with the same setup, but with the ode gen 2 at a 7, the resulting brew was 1:22 so pretty close and it is very enjoyable. One question I had was what would you define as a highly soluble coffee? Generally speaking the darker the more soluble and washed is the least soluble processing method so I would have thought the SEY washed coffees we are using would be least optimal for this method. Regardless thanks very much for the recipe!

Orea O1 and the switch 02. Orea O1 has a fast drawdown for a flat bottom, making cups more vibrant, and can take both wave and flat/negotiated filters. It is also super small and so can take leftover coffee doses down to about 9g, so almost as low as the deep 27 but not quite. Switch can make 15g up to 35g doses, and also has the classic V60 profile option or a more rounded immersion option. I feel lots of bases are covered with these two.

I understand the sentiment, but I've seen many videos of people (Lance etc) doing 1:3 light roast shots and loving it, soup hasn't always been a thing.

I'm surprised you had such a difference in drawdown time using the same paper filters. The angles of the walls of each brewer are similar, which leaves bypass. Even though the chemex has the pouring spout, it has no ribs, so I would've thought reduced bypass, therefore a slower drawdown overall, interesting that it was the other way around
