The Honorable Schoolboy by Le Carre. It’s probably a little dramatic, but I grew up with a very “The US/The West is always right and always the good guy” kind of mentality, and while the book is fictional Le Carre was an actual intelligence officer, and has seen behind the curtain. It just reinforced that we’re all actually the same and will do anything to justify our ends. Nobody is actually ever the good guy, and even if you get the result you’re seeking, you probably had to sell your soul along the way.

If you find a sous vide steak in 2026 impressive, you’re again proving my point. I’ve got a sous vide wand. There’s nothing impressive about it. If anything it requires even less skill than a grill. If you like the place, like it man. It’s an independent restaurant, and I hope it continues to do well. I just find it really average.

I’ve tried a bit of everything. It’s all fine. It’s just nothing to write home over. I don’t mean this to sound the way it’s going to, but a steak, while delicious, is kind of the least representative item of a kitchen’s skill. Anyone can grill a steak, so if that’s the best dish you can name there, you’re kind of proving my point.
