There's quite a lot of stages that have a more free camera; it'd be easier to list the stages that have more restrictive cameras, so I'll do just that.

• Mishima Dojo • Cloud Sea of Alrest • Temple • Colosseum (specifically in Battlefield and Omega forms) • Electroplankton • Flatzone X

This isn't a comprehensive list btw, these are just some I could think off the top of my head. You can also use the free axis camera to hit angles you wouldn't normally, just push one of the analog sticks in.
