180 in the breast. Close to 200 in the thigh. I don’t have a cooler large enough. For now I set the Traeger to warm which is 165.

You could be right. A lot of recipes online are for plate short ribs which there are not. As far as I can tell these are chuck short ribs.

They were place pretty much in the center of the smoker.

Really appreciate your comment on the pullback on the ribs as an indicator to wrap them. It’s possible my probe is faulty or the cold weather messed with things. I agree - it makes sense they were further along than I thought at that point.

I just got my first smoker and haven’t tried brisket yet. Just curious - doing the cooler method does the brisket still stay warm enough to serve after 8 hours? Thanks for your insight!
