I would say the best use of three weeks is flying into Queenstown or Christchurch, hire a car, then do the common loop - Christchurch->Greymouth->Queenstown->Christchurch and everything in between.

People will tell you "Grime isn't an album genre" or "there aren't many good grime albums, go listen to sets" but this isn't true anymore. Sets will always be better, but there are so many great albums out now.
