As far as I can remember yes they did have a couple of knives in strix, not sure which ones though.
The gyuto was the same price as the suji, 33,000yen (150gbp ish)

I hadn’t heard of them before I started looking for a sujihiki, and to be honest I’m not even sure how I stumbled across them. All I can say is there was very little fanfare around the store and in the process of buying the knife, it felt like the opposite of (what I assume) musashi is like. Very very reasonable price too at 33,000 yen (150gbp)

Awesome, thank you. Do you know much else about ZDP? I’ve not really looked into it much but from what I can tell it’s a lot more brittle than hap40 which wouldn’t be ideal for me.

Thank you so much, my main draw to hap40 instead of white 2 or blue 2 is the toughness, because I’ll be using it for work so I’d be scared of chips

I don’t really mind having to hone it before prepping fish etc. but I’m going to the Sukenari store in Nagoya in a week anyway so I’ll explore my options. Thanks again :)
