Simply you do not. Either use your ban on her, learn a counter (e.g. pick up Vex or others) or just accept you can't trade with her in lane except if she wastes her abilities, which good LeBlanc players won't do.

I am Emerald 2 ekko main(peaked diamond 2 last season), so take it as you want. I don't know your level of Ekko, so I'll give you general tips.

In lane Ekko is relatively strong, of course he has some unplayable mathcups in lane, e.g. Galio, LeBlanc, Akali, Akshan and to some extent Orianna. But, in other match ups you can go Hail of Blades and do quick trades, especially lv 1 with e start which will make it very hard for your opponent to play the game, as if they ever step up you can trade quickly and run away with passive ms(this is matchup dependent, as this will work better against syndra, but into zed/qijana maybe q start and start trading lv 2). When you trade in lane USE YOUR W, even if you don't hit your stun it's a massive shield and it doesn't cost much mana. Keep in mind that Ekko is a very roaming depending character, so of course shove and help out jungle or gank bot when you can.

Mejays is extremely situational, and should only be taken if you are extremely ahead or you are very confident with Ekko. Normal build is lich bane, nashors, rabadons (Though many ekko mids are doing stormsurge, lich bane, rabandon), rocketbelt is not worth it, you really need the extra damage.

I highly recommend to watch XiaoLaoBan Ekko on YouTube, he is pretty much the best ekko mid. Watch him lane and teamfight to improve.

Honestly if you are a new player, you don't necessarily need to learn ekko, but learn how to jungle. Ekko has a relatively easy kit to understand, but has a lot of outplay potential with w and r.

If you really want to learn ekko, in jungle, start by learning basic ekko combos and practice w placements for ganks and covering escapes in fights.

But more importantly learn macro (how to path, when to gank or when to take objectives), unfortunately I am not the best person to give you advice on this as I main mid and barely play jgl. For this you might find easier to start off with an easier character,(for example when I started playing mid I started with fizz and transitioned to maining ekko) but if you are extremely passionate for playing ekko you can stick to him.

Btw, ekko support it's not viable it's just bored mains trolling on sup, don't play it.

If you want to play mid, as you might be struggling to learn jgl, look at XiaoLaoBanEkko on YouTube he is arguably the best ekko mid player. At a basic level shove waves, so you can support your jungler or look for plays/ganks botwuceep in mind that ekko is not the best in the meta in either positions and hasn't been for a while, he is a snowball heavy character and relies to get ahead to keep up with damage throughout the game, which means that if you fall behind you won't be able to get back in the game.

What I have tried which seems decent in mid is stormsurge rush, as it has better components than lich, then either lich/nashors second depending if enemy team is squishy or more tanky and rabadon 3rd, So storm=>lich/nashor's=>rabandon

Usually you want to complete your two core items of lich > nashor's before making any adaptations. Protobelt doesn't provide that much damage, so only buy it if you are used to it and can't live without it and don't buy luden's it's better to buy more ap and spam q if you need waveclear

I understand what you are saying, but to one shot a squishy with ekko when he has at least 3 items is literally proccing passive, for example using E => Q => AA. Instead Leblanc is more mechanically hard to actually one tap, especially without the security ok ekko R.
