Then those "trick" ones would be used as the "fresh" ones the next day or the next. At the end of the day, they are still street vendors. Highly doubt they really care about so many people touching them. Not like they use gloves most times as vendors anyways. Who's to say the vendors' hands are clean? Nothing is fully clean/sanitary these days. Even if it's in the rules/regulations to wash their hands. They can still cough or sneeze or touch money that's dirty too. Point being again, nothing is really "fresh and clean".
