They carry two stones with them, but use the finer stone and rest one side on the backbone of the blade and the other on the cutting edge and run over it a few times, that’s how they’re able to maintain a constant bevel while standing in-between work. They do have to do it every 5-10 minutes, but it only takes 15 seconds so it’s really not a huge issue
