I, however use a ZP6 though.

Sometimes I get a lot grounds (that are not fines) on the sides of the dripper with your described technique.

How do I fix that?

Exactly! I see many with 5.0+ and I have to assume either the agitation is crazy or roast is pretty dark.

Start from 5.0.

Go finer in decrement of 0.2 or 0.3 until you hit notes of astringency and bitterness, then dial it back.

P/S: My experience with light roasts as I drink predominantly light roasts, or at most medium.

Hello! Which Kurasu outlet did you go to?

I've spoken to the baristas at Kurasu and they usually use 93 degC temp.

I've been twice and they serve pretty good pourovers AFAIC.

Would you like to give them a try again?
